Nothing says Christmas quite like baking. Whether you're making an assortment to send to friends and family or keeping them all to yourself (we won't tell anyone!), there's no shortage of recipes to choose from. This year, we put together a list of festive cookies for you to try your hand at, starting with incredibly easy ones and increasing in difficulty as the days go on. The level of complexity in baking is a bit subjective: It can refer to the skill and technique required, the number and type of ingredients to source, or even the time needed to achieve a finished product. Lacy Brown Butter and Ricotta Cookies

These lacy, rich cookies are crisp around the edges and chewy in the center. If you already have toasted sugar on hand, just mix it with melted butter, flavor that mixture with a vanilla bean pod, combine with your dry ingredients, then portion the dough before baking.
